Stainless Steel Cup Head Bolts have a Cupped (dome) Head with a square section underneath the head.  This square section bites into the timber joint that's it's being applied to which stops the bolt from spinning when nut is being tightened.  The cup head also gives a nice visual appearance compared to the standard hex head bolt.
